February 2022 Update

Christmas feel a distant memory a really, but back in December the Sevenoaks volunteer had our own mini version of Bake Off with budding Paul Hollywood’s and Merry Berry’s baking mince pies for our willing judge Jane (photographed) to sample.

The outright winner was… M&S, which was entered by the judge herself. The volunteers also enjoyed some delicious festive fudge homemade by our Trainee Ruth, and there were several request for the recipe, so well in time for next year, here it is. Massive thank you again to all out hard working volunteers, and here’s hoping for only good thing’s in 2022.

 

Ruth’s easy Christmas cake chocolate fudge 

  • 300g of chocolate, dark or milk 

  • 397g of condensed milk 

  • 50g of butter 

  • 100g of icing sugar 

  • 100g of Christmas cake, leftover, crumbled 

  • 25g of mixed whole nuts, broken into small pieces 

 

Break the chocolate into small pieces and place them into a non-stick saucepan along with the condensed milk and butter. Heat very gently until the chocolate and butter has melted and the mixture is smooth and glossy. 

Beat the icing sugar into the chocolate mixture and then add the crumbled cake and nut, beat well until everything is amalgamated. 

Pour or spoon the fudge into an 18cm square tin or container that has been lined with greaseproof paper and smooth over the top of the mixture with a knife or spoon. 

Set aside in a cool place or the fridge for an hour to set, before cutting into squares. Keeps for 2 weeks in a cool place, such as a covered tin or container.
